It’s been a long LONG week. Unfortunately, me and my family caught a bad case of the flu. It’s been the kind of flu when you think you are sick one day, but a couple days later you are really really sick. And you wish you were only as sick as the first day. It was also a bummer since we had plans with friends to head to Tahoe. Why is it that germs and viruses are ready to pounce when you’re excited for a long fun weekend getaway??
Well, I am very happy we are all on the mend, especially our little babe. No matter how old he gets, it’s always tough to see him in pain and lethargic. And it’s definitely stressful and scary not knowing how sick he may get. I remember last year having to take him in for hours of breathing treatments and being terrified. I think the only welcome and selfish part of having a sick little one is all the quiet cuddle time. Our little guy is usually bouncing off the walls. But for a few days he snuggled for hours, breathing his sweet breaths, and placing his little hand in mine.
We haven’t been doing much cooking or eating this week. When I’m feverish and coughing up what feels like a lung, food sounds really unappealing. I usually just want minimal snacks that are cold and sweet, so I am very happy that it is citrus season. Isn’t it amazing that Mother Nature knew citrus and cold season should go hand in hand. She really knows what she’s doing.
One night I was throwing some of my favorite citrus over yogurt and I thought of adding citrus to overnight oatmeal. The base of this recipe is your standard overnight oatmeal: equal parts oats, yogurt, and milk plus a tablespoon of chia seeds. And then I added ground cinnamon and a pinch of ground cardamom. I wanted to incorporate some warm spices to complement the citrus.
In the morning, I topped with segments of blood oranges and grapefruit and squeezed some of the juice in too. I loved the refreshing feeling of the citrus alongside the rich creamy oats.
I hope you enjoy friends and I’m wishing you a flu-free finish to the winter season! Xoxo
