So I could lie and tell you I love chia because of all of its healthy attributes. But that’s just a happy coincidence. I love chia because once you soak it, it has a strong likeness to tapioca pudding. And I have always loved tapioca pudding. Luckily, chia pudding is healthier, which makes it a perfect start to our healthyish lifestyle in 2016.
When I say healthyish, I mean everything in moderation. I’m not good at cutting things out of my diet because I just don’t want to. I love food too much. So instead, our family goal is make more vegetable main dishes and to limit our unhealthy meals to 3 per week. That seems reasonable, right?
This vanilla almond chia pudding is SO easy to make. You need to soak the seeds for at least one hour. But you can make a large batch on Sunday night to enjoy all week long. Once it is soaked, just add your favorite toppings (fruit, granola, etc.).
Ingredients
3 servings
- 3 cups almond milk
- 3/4 cup chia seeds
- 1 tablespoon agave nectar
- 1 1/2 teaspoons of vanilla extract
- 1 teaspoon of cinnamon
- Combine all ingredients into a bowl and stir to combine.
- Place in the refrigerator for at least 1 hour.
- Serve with your favorite toppings.
