A simple icy treat that’s healthy enough to have for breakfast!
Suns out, pops out!!! Friends, I am so excited about these!!! I’ve been wanting to attempt my own popsicles for awhile and I finally ordered my pop mold last week. And now that it is strawberry season and it’s in the eighties outside, the timing couldn’t be more perfect.
One of the best things about making your own is you can play around with the ingredients. You can use so many things…juice, yogurt, fruits of all kind, milk, chocolate milk, margarita mix (sounding good yet? hehee), coffee, chai, chia pudding etc. And I love that I know what is going into these and into my little one’s body.
I was feeling pretty guilty because I bought some of those ridiculously good, but not so healthy strawberry shortcake pops earlier this year. Well my little one found them and was starting to become obsessed. We only let him have one like every few weeks. But now that it is hot out, I knew it wouldn’t be too long before he was asking for ice cream everyday. Don’t get me wrong, I still love ice cream, but it’s nice to balance the high fat ice cream days out with these healthier versions.
Ok, so friends, these are so super simple. It is just a combination of strawberry puree and plain yogurt. I flavored the yogurt with a banana, vanilla, and some agave. But that’s it! And the healthy ingredients means you can have these for breakfast if you want to!
My little one was sick last week so over the weekend when he felt up for it, we made these pops together. My favorite lil’ helper. And how cute are those toes?! 🙂
When these come out of the freezer, you may find them hard to get out of the mold at first. Try running them through some warm water and I also used a knife to push down along the sides so I could pull out easier.
Then I just wrapped individually with plastic wrap and in a freezer bag so we can enjoy anytime.
I hope you enjoy these as much as I am (like literally right now, LOL). Thanks so much for reading!
- 3 cups strawberries, hulled and halved (plus extra sliced strawberries for optional decorating)
- 1 banana
- 1 cup plain yogurt
- 1 teaspoon vanilla
- 2 teaspoons agave sweetener
- In a blender, blend the strawberries with 1 teaspoon of agave. Place in a bowl and set aside.
- After cleaning the blender, blend the yogurt with the banana, vanilla, and teaspoon of agave.
- Take out your popsicle mold. Optional: If you want to include sliced strawberries in your pops, start with one dropped into your mold before you add in any of the other mixtures.
- Drizzle or squeeze in the yogurt mixture into each mold to fill about ⅔ of the mold. Then add in some of the strawberry puree mixture. (You can also alternate the amount however you want and I also like to add another one or two slices of strawberry).
- Follow the instructions for your mold and then place the mold in the freezer for at least 6 hours.
- Remove from freezer and enjoy. (Quick tip, if having trouble removing the pops from your mold, run under a bit of warm water. Or you can use a knife to scrape down the side to make it easier. Once you have removed them all, you can wrap them in plastic wrap and then place in a freezer bag to enjoy anytime!)
