Being a mom with two kids under the age of five means feeling like there’s never quite enough time in a day; the hours seem to fly by. My mornings are packed with making breakfast, making lunches, and getting the kiddos changed, brushed, and dressed. After I manage to put myself together (kind of), we run to the car in hopes of getting my son to Pre-K on time. Mid-day is full of errands, nursing, and a quick bite of lunch for me. And once I pick my son up from Pre-K, it’s kind of a free-for-all, blurry, survival mode situation. Late afternoons are my kiddos’ witching hours, and amidst the chaos my husband and I somehow get dinner on the table before starting the bedtime routines. At the very end of the evening, we try to have a peaceful hour together, maybe watching a show and having a glass of wine. Sound familiar to anyone else??
Winter makes time feel even more fleeting. Before I know it the sun has set and I’m bidding farewell to the day and saying goodnight to my babes. About couple weeks ago, we were graced with a few perfect days right smack in the middle of winter. I’m talking seventy degrees, clear skies, no wind kind of days. And it got me so excited for Spring! Pack away the scarves, bring on the tank tops! Goodbye citrus, hello berries! Welcome more daylight and sunshiny warm hours!!
Although we have a few more weeks until it’s officially Spring, I can’t help but bounce ahead. And since I’ll be strutting around in more daylight soon, it got me feeling that my wardrobe could use a refresh. My baby girl is already six months old, so I’ve almost already purged the maternity wear. But it’s not just about clothes right ladies? Mama wants some new accessories! When it comes to style, I’m more of a minimalist. I love neutral classics with just a touch of something special. That’s why I’m super excited about my new JORD Dark Sandalwood & Smoke watch. Spring is the time when the kids come out of hibernation to run around and ride their bikes while their parents watch and enjoy adult conversation. This also means taking dinner outside. And that means easy casual meals that come together quickly and don’t require silverware. After all, us parents also need a hand to hold an adult beverage.
My top choice for finger food is pizza, and it’s a perfect way to play around with seasonal veggies. When I think of Spring vegetables, the first thing that comes to mind is asparagus. And I’ve always loved it wrapped in prosciutto. I’m not sure why I haven’t put it on a pizza before, but this Prosciutto-Wrapped Asparagus Pizza is a winning combination for sure. The name alone makes me hungry. LOL.
I love making homemade pizza as opposed to just buying something frozen. To save time, I start with store-bought dough. I roll it out on a floured surface into an oblong rectangular shape. Somehow that feels more homemade plus it’s much easier than getting a perfect circle. WIN-WIN.
Once it’s rolled out to my desired thickness (about 1/4 inch) I drizzle with a little olive oil. This time I used an infused olive oil I purchased from a local shop. The olive oil is made by Amphora Nueva and the flavor I chose was Tuscan Herb. The infusion of herbs, sun-dried tomatoes, and garlic added a lovely additional layer of flavor. After topping with mozzarella, I wrap each asparagus in a slice of prosciutto to ensure every bite has all the toppings. Then into the oven for about 20 minutes until the crust is golden and the cheese is melted and bubbling. YUM!
After drizzling with a balsamic glaze, I cut it into rectangles for easy grabbing and easy eating.
This pizza is a lot like my style; simple with a little something unique. And now that the pizza is ready, it’s time to go outside and enjoy the remaining daylight with my babes. - 1 store-bough pizza dough ball
- Olive Oil
- Shredded mozzarella
- Prosciutto
- Asparagus
- Optional Garnishes: Parmesan & crushed red pepper flakes
- Preheat oven to 425 degrees
- On a floured surface, roll out pizza dough to desired thickness (I prefer ¼ inch thick).
- Place dough on a rimmed sheet pan. Baste dough with olive oil and top with shredded mozzarella.
- Wrap asparagus with slices of prosciutto. Then place on pizza.
- Bake for 20 minutes until edges are golden brown and cheese is bubbly.
