All the shower recipes have a PINK theme. So I decided to create Pretty-in-Pink Parfaits with Greek yogurt and homemade granola. These parfaits are great for a baby shower, brunch, or as a sweet treat for yourself. The granola would also make a wonderful host gift or party favor!
I just love homemade granola; it’s such a fantastic way to show someone you care. Just remember to make it in double batches because it always goes by fast. 🙂 I’ve made homemade granola before, but I really wanted to create a pink version and keep it healthy. I like to make things hard on myself. LOL. It took a few tries, but to get a pink color, I used beet powder. Beet powder is so gorgeous and is something I’ve used before in chia pudding. It has a very mild beet flavor so works so great as a natural food coloring.
The beet powder I love is from the Oaktown Spice Shop*. I combined it with sunflower oil, agave syrup, and vanilla. I used agave syrup because it is light in color so it helped keep the pink color in tact. I also added a bit of date syrup for its health properties. My favorite is Just Date Syrup*.
I combined the oats with a Super Seed & Ancient Grain Blend I found at Trader Joes. It can also be purchased on Amazon. It’s a combination of sprouted buckwheat, sprouted millet, chia seed, golden flax seed, red quinoa, shelled hemp seed, and amaranth. So basically, lots of good healthy stuff to make your granola even more full of love.
Then I added in that beautiful pink syrup, and tossed it to combine. The result was this. Yay PINK!!
I baked at 325 degrees in a single layer (very important for it to bake evenly) on a rimmed baking sheet lined with parchment paper. Once it was baked, the result was a subtle pink. Yippee & Phew! LOL.
After cooling the granola completely, I mixed in dehydrated raspberries and strawberries to give the granola more pink hues.
When I built the parfaits, I used small juice glasses. And to add a little flair and more pink, I combined 1/2 teaspoon of beet powder with 1 tablespoon of agave syrup and drizzled down the side of the glass. So fun!
The parfaits are so good on their own, but you could also serve with some other fun toppings like fresh fruit, date syrup, cocoa nibs, chopped nuts, and even edible rose petals.

- 2 cups oats
- ½ cup grain blend (I used the Super Seed & Ancient Grain Blend from Trader Joes)
- Pinch of salt
- ¼ cup agave syrup
- ¼ cup sunflower seed oil
- 1 tablespoon date syrup (I used Just Date Syrup)
- 1 teaspoon vanilla
- 1 tablespoon beet powder
- Preheat oven to 325 degrees
- In a large bowl, toss together the oats, grain blend, and salt. Set aside.
- In a small bowl, combine the agave syrup, sunflower seed oil, date syrup, vanilla, and beet powder.
- Pour the agave syrup mixture over the oat & grain mixture. Toss together to combine.
- Pour the oats onto a rimmed baking sheet lined with parchment paper in a single layer and leave at least a half inch around the edges. Bake for 16-18 minutes, stirring once gently.
- Let cool completely on the sheet pan. Once cooled, pour into a bowl or storage container. Add the dehydrated strawberries & raspberries. Toss to combine.
- Build your parfaits in small juice glasses layering the Greek yogurt and the granola.
- Serve with any other desired toppings such as fresh fruit, cocoa nibs, chopped nuts, date syrup, or edible rose petals.
If you cannot find the Trader Joes Super Seed & Ancient Grain Blend, substitute with flax seed, chia seed, quinoa, mullet or even chopped nuts (such as almonds or walnuts).
