Well we certainly hopped right into summer with this heat wave, didn’t we?!! It’s one thing to be in a house without air conditioning when it’s 105 degrees outside. It’s another thing to be in a house without air conditioning when it’s 105 degrees and you are over 7 months pregnant. Oh man! My bestie and I are both expecting in August and we’ve been saying how we are in desperate need of pool lounging days with fun frozen frothy drinks in our hands. So I’ve been promising her mocktails and mocktails we shall have!
In May, we took our toddler to Disneyland for the first time. It was so magical to see his little face overwhelmed by it all. And I’m looking forward to one day taking him again along with his little sister.
When in Disneyland, something I highly recommend and always HAVE to do is treat myself to a Dole whip float at the Tiki Juice Bar! I LOVE fresh pineapple and the float is the perfect way to beat the heat as you wait for the Tiki Enchanted Room show.
Ever since I had the float, I’ve been obsessed with pineapple. I literally have two whole pineapples in my fridge right now. Our fridge is not large and I always love my hubby’s face when he opens the fridge and sees something like this. The face that says…ok Valerie, why do need two whole pineapples? lol.
With the intention of working my way through all my pineapple and satisfying the cocktail cravings of me and my bestie, I came up with this very simple pina colada mocktail. It’s fresh pineapple chunks, pineapple juice, coconut cream, lime juice, rum extract and ice! It’s so refreshing and sweet and delightful. I highly recommend putting your glass in the freezer first before pouring in your mocktail. That way your drink stays nice and frozen, especially on these crazy hot days.

- ¼ cup fresh pineapple chunks
- 1 tablespoon pineapple juice
- 1 tablespoon lime juice
- 3 tablespoons coconut cream
- ½ teaspoon sweetener like honey or agave
- ¼ teaspoon of non-alco rum flavoring
- Fresh pineapple chunks for garnish (optional)
- 1½ cups of crushed ice
- Place everything but the ice in a blender and blend until smooth.
- Add the crushed ice, pulse, and then blend until incorporated.
- Serve in a chilled glass, garnish with pineapple chunks and serve.
