This is a recipe I make regularly for my son with ingredients we always have. Making these on the weekend is a huge timesaver for our busy weekday mornings. I just heat a few up in the morning and my son has a a hearty breakfast he loves. They also make a great addition to his lunch.
When I think up recipes for my son, I basically think of what I would like to eat and then make it mini. I make frittatas ALL THE TIME. They are so easy and beautiful. These mini versions are even easier and are a great way to serve up more greens to my toddler. I love snacking on these myself too.

Ingredients
7 eggs
1 cup of deli-turkey, chopped
1 cup of mixed greens, chopped
1 cup of shredded mozzarella
1/2 cup shredded parmesan
1. Preheat the oven to 350 degrees.
2. Whisk the eggs.
3. Add the eggs, turkey, mixed greens and 1/2 of the mozzarella. Stir to combine.
4. Fill each mini-muffin tin with 1 tablespoon of the egg mixture.
5. Top with shredded mozzarella and shredded parmesan.
6. Bake for 11-13 minutes.
7. Remove from oven and let cool for 5 minutes before serving.
8. Place on a serving platter or in a storage container.
