Less and less, I’m feeling like a need a full sit-down dinner. I love the family time at the dinner table and it gives me great joy to feed my family a hearty meal. But as I get older, I find more and more that I could dine solely on small plates, like all-day tapas. These pictures are my favorite way to eat; cheese, fresh herbs, fresh veggies, fresh bread, and a glass of wine. I could eat like this all year-round, but there’s something amazing about this time of year. Sitting in our yard with warm sunshine and a slight breeze, watching my son and husband play on the grass, and sharing special snacks like this one; it feels like what life should be all about.
If you’re not familiar with burrata, it means “buttered” in Italian and is basically a beautiful white blob of cheese heaven (also known as fresh cheese made from mozzarella and cream). I can’t call this a recipe…it’s just how I like to eat burrata. But I love it so much, I couldn’t help but share. I start by slicing a seeded baguette and “toasting” in a small pan with butter (few minutes on each side). I then place the burrata on a bed of greens. I surround the burrata with the baguette slices, roasted tomatoes, and watermelon radishes. Is your mouth watering yet?? Yep, mine too. Finally, I top the burrata with chopped basil and chives and freshly ground pepper.
Quick tip about serving burrata: When buying at the store, remember that it should be used within 2 days. And once you open the package, serve it immediately. It’s fresh mozzarella and cream for a reason. So unlike parmesan, you don’t want to leave it hanging out in a plastic container. Don’t worry, once you start eating it, you won’t be able to stop until it’s gone.
