These little toasts are a refreshing way to brighten up your morning!
Hi friends!! A couple weeks ago I participated in another seasonal collaboration all about the grapefruit. I was so happy to feature the grapefruit since it often gets overlooked during citrus season. It’s not as bold as the blood orange, not as sweet as Cara Cara, and not as cute as the kumquat. But the grapefruit has its own signature zing and it’s also my favorite ingredient for a cocktail.
Last winter I tried the combination of citrus and mascarpone and fell in love! But I never got myself together enough to post a recipe.
This time around I wanted to build a little more flavor into the mascarpone with sweetener and vanilla bean paste. And I promise it’s still easy peasy. How pretty are those vanilla bean specks!
Once you have your mascarpone and grapefruit segments ready, it’s just a bit of assembling. Start with a slice of toast, spread on the mascarpone, and add a few grapefruit slices. As a final touch, I like to sprinkle with some fresh mint confetti, which is a really fancy name for finely chopped mint.

- 2 grapefruits
- Fresh mint leaves, finely chopped (about 1 tablespoon)
- 6 Bread slices, toasted
- For the vanilla mascarpone
- 8 oz. mascarpone
- 1 tablespoon sweetener (i like Just Date Syrup)
- 1½ teaspoons vanilla bean paste (or vanilla extract if you don't have the paste on hand)
- Segment the grapefruits (slice rind, with a very sharp knife, trim the fruit's end; set the flat side on a cutting board; slice off the peel and pith in sections. Set the fruit on its side. Cut toward the center, along the membrane until the cuts meet, releasing the segment. Transfer the segment to a bowl. repeat.)
- Stir all the vanilla mascarpone ingredients together.
- Slather each slice of toast with the mascarpone. Top with grapefruit segments. Finish with sprinkle of the fresh mint.
