These frozen banana bites are like bon-bons without the guilt. Eat them for dessert or breakfast!
Summer heat is in full swing friends! Are you melting like I am?? Or are you lucky enough to have an air conditioned house to escape to. Our house was built in the 60’s and I guess they didn’t need A/C then?? A/C is definitely on the someday soon list. But in the meantime, we can only rely on window fans and frozen treats. I love the excuse to eat ALL the ice cream, but I also like to balance my family out with some healthier treats.
When I was a kid, I loved chocolate covered frozen bananas! Did you?? There’s something so satisfying about the texture and sweetness of the frozen banana complimented by the crack of the chocolate shell. But do you remember how they would get super messy?? I recall chocolate dripping all over my hand as I tried to finish it before everything was melted. And then part of the banana would warm up and be so eewww. Lol.
ENTER frozen banana bites. I was super excited to create these for two reasons: 1. Why did I not think of this before?? 2. Bird Seed Food Co. kindly sent me samples of their craft granola and I’ve been brainstorming all the ways I can eat it. Like instead of just straight out of the bag. Lol. Using them as toppings for these bites felt perfect. After all, with the granola, these are totally a breakfast food. The craft granola comes in three amazing flavors: Toasted Granola, Kasha Crunch, and Goldenola. My favorite is Goldenola. It has a bright vibrant flavor of ginger and turmeric and a gorgeous color to match.
I used all three types of granola as toppings. I also had some leftover freeze-dried raspberries/strawberries in my pantry so I crushed those up together and used them as a topping as well.
THE SETUP
The key to making this frozen banana bite process a successful experience is setting up a little station with adequate space. Do it before you melt the chocolate. The setup isn’t too complicated. You just want your sliced banana to the left, your chocolate right under or next to that, your toppings next, and then a baking tray on the far right to place the finished bites.
Once you have your station all setup, and your chocolate melted, I recommend using two forks. Place the banana on one fork and use that fork to place the banana into the chocolate. Use the other fork to help coat the banana and manage any excess chocolate (as if that were a problem…hehee).
After the banana is nicely coated, place it into one of the toppings. Use your fingers to sprinkle the topping all around. Then use one of your forks to place the coated banana onto the baking sheet.
After all the banana pieces are covered, place in the freezer for at least 4 hours. Then remove from the freezer and enjoy! Store in an air tight container in the freezer for up to two weeks.
I hope you love these friends!! And thanks as always for reading!
