Kimchi Cauliflower fried 'rice'

Ingredients
  • 2 cups cauliflower rice*
  • ½ cup kimchi, chopped
  • ¼ cup yellow, finely chopped
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon canola oil
  • Optional: Scallions, crushed red pepper flakes, black & white sesame seeds
Instructions
  1. In a small mixing bowl, whisk together the two eggs and set aside.
  2. Heat canola oil in a wok or large sauté pan over medium heat.
  3. Add onion and kimchi and sauté for 3 minutes.
  4. Add cauliflower and sauté for 3 minutes.
  5. Add the whisked eggs, and stir to combine. Let sauté for 3-4 minutes until cooked through.
  6. Add the soy sauce and sesame oil, stir to combine, and let sauté for 1 more minute.
  7. Optional: Top with scallions, crushed red pepper flakes, and sesame seeds.
  8. Serve and enjoy!
Notes
*To 'rice' cauliflower, place cauliflower florets into a food processor and pulse until broken down into rice sized pieces. This recipe is a small batch for 2 people. So if making for a crowd or you want to store some for later feel free to double or triple. You can also make this recipe without the kimchi. Just exclude.
