Hi friends!! It’s summer! And I can hardly believe it! May was a very busy month of two vacays mixed in with a case of the Nora Virus my whole family had the pleasure of sharing. So it’s nice that we are now staying local and healthy (crossing fingers).
Now that it’s summer, I’m really starting to long for the day I can have a drink again. All the BBQ’s and pool days have me wanting fun fruity cocktails or a refreshing glass of white wine. It doesn’t help that it was recently National Rose Day either.
This Blueberry Peach Mojito Mocktail was my first attempt to satisfy my drink craving and I was oh so happy with it. The colors were also perfect to cheer on our Warriors!! Let’s go Dubnation!!
My favorite part of this mocktail was the peach simple syrup. So delightfully summer! The recipe definitely makes more syrup than you need so you can either make more drinks OR mix it in with your favorite lemonade or iced tea (or actual cocktail).
Whether you’re pregnant like me or just on a no booze diet, I hope you enjoy friends! Happy Summer to you!!
- For the peach simple syrup:
- 1 peach, skin removed and chopped into chunks
- 1 cup water
- 1 cup sugar
- For the mocktail:
- 1 club soda can
- 1 lime
- 1 peach, chopped into ½ inch chunks
- ½ cup blueberries
- 2 tablespoons of mint leaves, plus more for garnish
- ¼ cup turbinado sugar to rim the glasses
- To make the simple syrup: Place the water, sugar, and chopped peach into a small saucepan. Bring to a boil, then lower the heat, and simmer for 20 minutes. Remove from heat and let cool for 5 minutes. Pour the mixture through a strainer into a small bowl or mason jar. Place in the refrigerator for at least 1 hour.
- To assemble the drinks: Place the turbinado sugar on a plate. Take a peach slice and rub the rim of the glass. Place each glass on the plate and twist to coat with the sugar. Place 2 tablespoons of simple syrup, half of the peach chunks, and half of the blueberries in each glass. Add 1 tablespoon of mint leaves (I roughly chopped mine but you can chop or leave whole). Mull away! Add crushed ice, juice of half a lime, and then fill with club soda. Top with more fresh mint as a garnish. And enjoy!
