Hi friends!! In May, which feels like forever ago now, I made my way to Oaktown Spice shop. Me and a couple other lovely blogger ladies met up for a peruse of the shop and some lunch. On top of being so excited to meet each other in person, I think we all felt like kids in a candy store. It is an absolutely amazing place full of more spices and varieties than you can think of.
One of the items I picked up was this beautiful beetroot powder. On top of being a new super food (studies claiming improvement of athletic performance, lower blood pressure, and increased blood flow), it’s color is absolutely stunning! And I’ve been dying to integrate it into a recipe ever since our trip to the spice shop. I was just struggling to think of where I wanted to try to first. Last week, I was making my standard vanilla chia pudding recipe. I’ve been seeing so many fun varieties of chia on my feed. And it reminded me of the powder. So I threw in a teaspoon and absolutely loved it!
During my pregnancy, I’ve also been obsessed with Greek yogurt. The same thing happened with my first pregnancy. There’s something about it’s texture, coolness, richness, and simple flavor that I can’t get enough of during pregnancy. So creamy and refreshing.
Parfaits are a great way to combine chia pudding and yogurt plus any other favorite toppings. For this version, I added fresh cherries and a dark chocolate-cherry granola. So yum! I made this beetroot chia parfait for breakfast, but it is totally dessert-worthy as well. It is especially refreshing on some of our hot summer nights.

- 3 cups almond milk
- ¾ cup chia seeds
- 1 tablespoon agave nectar
- 1½ teaspoons of vanilla extract
- 1 teaspoon of cinnamon
- 1 teaspoon of beet root powder
- Yogurt (I like using Greek vanilla)
- Granola
- Cherries, pitted and halved
- Combine all ingredients into a bowl and stir to combine.
- Place in the refrigerator for at least 1 hour
- To assemble your parfait: Place 2 tablespoons of the chia pudding in a glass. Top with 2 tablespoons of yogurt. Continue this pattern until you get close to the top. Then add granola, and cherries. Enjoy!
