I use parchment paper whenever possible. It’s part of my resolution to make less mess in the kitchen (which my husband always appreciates). This dish is a perfect example of how using parchment paper can make your weeknight dinner routine 100% easier. You place parchment paper on a baking sheet, put all your ingredients in it, wrap, bake at 375 degrees for ~13 minutes, and voila. An easy dinner that looks elegant and cleans up real nice. It’s also perfect during the winter when there is so much gorgeous juicy citrus available.
You can use any white fish for this dish. If you’re on a budget, tilapia is a very affordable mild white-fish. We use it often for weeknight meals. The ingredients below are for 1 filet. Usually, I only eat half a filet. But I always like to have more than less. So I multiply the recipe depending how many I’m serving.
Ingredients
- 1 filet of tilapia
- 3 slices of blood orange*
- 2 slices of tangerine*
- 1/4 fennel bulb, sliced thin (plus fennel fronds)
- olive oil
*You can use any mix of citrus you like (oranges, tangerines, clementines, mandarins).
- Preheat the oven to 375 degrees.
- Line a sheet pan with parchment paper.
- Brush the tilapia with olive oil and season with salt/pepper.
- Place the tilapia in the center of the parchment paper.
- Surround the tilapia with the sliced fennel. Then top with fennel fronds and sliced citrus.
- Wrap the parchment paper around the tilapia and twist the ends so it is completely covered.
- Place in the oven for 12-15 minutes depending on the size of the filet.
- Remove from the oven and serve. When you serve, you can either transfer the tilapia (with paper and all) to a plate. Or cut up the filet into smaller portions and serve with mixed greens.
